Our dark wild ale in its purist form. Blend #1 of this beer is made up of 2 barrels with an average age of 8 months in oak, half of the blend was fermented with lab cultures and the other half with our wild house culture of yeast and bacteria. This beer smells like toasted danish rye bread upfront with a hint of powdered jam doughnut. The flavour has great length and lingers on the palate for ages. It starts with firm citric acid up front that mellows into clementine and orange before finishing with dark chocolate and toasted almond.
